A few people had asked for the recipe for the sausage cheese balls I did at the Plano Eggfest, so I made up an entry on my blog. Super easy to do and a great appetizer.

My brother got in on the action that day as well, while I was intently checking something on the table, not sure what.

  • My wife has a recipe similar to this and makes these as a Christmas breakfast tradition. I am found of them, but I was wondering if you ever thought about a dipping sauce for them? I just feel like they are missing something and maybe a gravy or some sauce might add some flavor to them. What do you think?

    I make a breakfast sauce for over sausage or Canadian bacon and english muffuns during the holidays. It's a while sauce with gruyere cheese and diced hard boiled eggs. I also wrap sausage around a hard boiled egg rolled in bread crumbs and baked with the same sauce minus the chopped egg. Very easy and good.

    Egg Cream Sauce


    8 hard boiled eggs
    1/4 cup Butter
    1/4 cup all-purpose flour
    2 cups half-and-half
    1 tsp seasoned salt
    1 tsp chicken base
    1/4 tsp dry mustard
    1 cup freshly grated Gruyere

    1. In a saucepan, melt the margarine, add the flour, and cook, stirring for
    2 to 3 minutes. Add the half-and-half gradually, and stir until mixture
    thickens and season with seasoned salt. Add the dry mustard and the Gruyere
    and stir until melted.

    2. Stir in eggs if using.

    Scotch Eggs

    1 lb bulk pork sausage
    6 hard cooked eggs
    1 cup fine dry bread crumbs, purchased
    -- or home made, plain or seasoned
    1 egg
    1 Tbs water
    1 tsp prepared mustard

    1. On a sheet of waxed paper, divide sausage into 6 equal portions; wrap 1
    portion around each egg. Roll each wrapped egg in bread crumbs.

    2. Beat egg with mustard and water; dip sausage-wrapped eggs in beaten egg
    mixture.

    3. Roll in bread crumbs again; place on a rack in a shallow baking dish.
    Bake at 400° for about 35 minutes or until browned, turning once during
    baking.

    4. Cut into halves lengthwise; serve hot sauce of your choice.

    No margarine in mine either. That's what I get for cutting and pasting in a hurry. Sorry.......

    If I try to edit it won't let me scroll down to change the stupid thing. Just change it to butter and pretend margarine is not there.
