went to the fishmarket at lunch hoping to find some mahi mahi, no luck. they did have some nice bluefin steaks. is there an internal temp desired for med/rare. ive always just seared and then dwelled for a few minites and never checked temps. this time id like to marinate, sear, chill and then roast at a low temp with some guava wood

Hatch just came over this weekend and cooked some killer sesame seed encrusted bluefin tuna. He took it to 125, and it was pink in the center, but not red. If you like them rarer, shoot for 115.[p]Still, it was very moist, but any more would have killed it. Depending on how thick it is, just the sear should be enough. If you have a monster chunk, then you might need some roasting. [p]happy cookin!

ill shoot for 120, if its not done ill put some tinfoil on it and wait for the temp to climb.should work fine. thanks for the info, never seen it with tuna steaks. these look super fresh.
