My sister called me this afternoon and said she got a deal on Beef Tenderloin steaks from costco today. So she is calling a family cookout tonight! (8-10 steaks) She wants me to cook it on my LBGE. I need some help. Am I going about this the correct way cooking these?
i think these steaks are 1.5 inches thick.
i don't have a raised grid either. YET!!
*Sear at 650 for 90 seconds on both sides and pull off and let rest for 15 minutes wrapped in foil.
*Bring temp down to 400 cook to 125 degrees for medium rare. 135 for medium.
*Let rest for 10-15 after I pull off.

How far off am I?

i probably wouldnt go past 130 internal. if you dont wrap the perimeter with bacon, use some string, they tend to fall flat if they are not held together. the bacon doesnt add much taste but it does make a great presentation

Yeah that looks about right, I usually pull that cut of beef off a little below 130 probably around 126-7. Dont worry you will be fine.
