Steaks - Help

I am new to the green egg and made steaks for the first time the other night. They turned out so smokey you could not even taste the meat ... all smoke. I used the green egg natural charcoal. Can anyone tell me how to grill the steaks without so much smokey flavor. The same thing also happened with my burgers.

let it warm up and burn till the smoke clears coming out the top (10-15 mins after you reach your cooking temp)... place your hand in the exhaust for a second or two and then smell your skin... that's what the meat will smell like...Kent Madison MS

You have to let the lump burn itself clean, which can take 15-20 minutes after lighting. Only then do you want to put your meat on.

Try leaving the top completely off too for less smoke. I've gone to mostly controlling my EGG with the bottom vent only. I usually only use the top now for low & slows.Packerland, Wisconsin
