I've got a rack of goat ribs that I need ideas of how to season then how (time and temp) to cook. Also, if smoking is an option...what wood will go best with goat meat. I cook a lot of vineson and expect goat to be similar, but have never done vineson ribs. Thanks in advance!

Any fruit wood would work for them. Also some fresh mint chopped in a savory rub would be perfect. I'd love to see some pictures of the cook.
    Good luck!!

I thought about a merinating the ribs in an EVOO based herb "solution" then smoking, 220 dome temp, with apple wood and with bacon draped over the ribs to avoid dry ribs.

I think that'll work also. How many ribs in the rack? If you had both sides you could do two different methods.
