Hello to all,
cooked a Argentinian Beef Tri Tip today:

Bought this EVOO in my holidays. Bought it direct at the mill:

Seasoned with EVOO, Salt, rosemary and garlic

seasoned:

first direct:

olive wood:

lower temp, until 135 F was reached:

resting:
