Tilapia on the egg

Hi All,

Per my wife's request, I wrapped up some tilapia in some tin foil, and put it on the egg at about 300f. The fish was frozen. It took the better part of 30 minutes to cook through.

It came out quite well.

Any ideas for another fish that I can cook in this way?

    Catfish and flounder are others I cook in foil on the egg.

    I seal the fish inside a foil pouch with seasoning and a couple pats of butter and sometimes a slice or two of lemon. I call it "Jiffy Pop Fish"

    I've done a similar type of cook before with brook trout and landlocked salmon (white flesh). We always wrap 'em up with salt and pepper, butter, lemon, tomato slices and onions. They turn out awesome. We are also not doing filets...just clean the fish and throw the whole thing in there. the bones ocme right out when it's done.

    Just about any fish. You might want to try parchment paper in a pan, a little more elegant. In essence, you're steaming the fish. Addition of a cream sauce or white sauce can change things up. Experiment.
