Grilled Bananas at the Texas Eggfest

I promised some folks I would post this after the Texas Eggfest

Grilled Fruit Marinade
1 can of coconut milk
1 tablespoon of cinnamon
1 teaspoon of powdered ginger or fresh grated ginger
1 teaspoon of chili powder or more
½ lb of brown sugar
1 jigger of dark rum
The juice of ½ lime
The zest of ½ lime
3-4 lbs of Bananas cut lengthwise and then in half. Leave the peel on.
or
1 cored Pineapple cut into chunks or slices
or
3-4 lbs of Kiwi fruit
Or
3-4 lbs of Mangos
Mix the marinade ingredients in a gallon zip lock bag.
Add the fruit and marinate overnight.
Wipe the grill down with with oil or PAM. Grill 10 minutes with the bananas the peel side down @ 425 degrees.

Can you post the recipe for the jalapeno and water chestnuts cook you did? I had a couple and want to do some more.

I had lots of them John :laugh: Very good...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
