It says a pork roast @160. Isn't that under cooked. I have read 190 everywhere else.

Is a pork roast the same as a butt?

I don't think that would end up undercooked. You want to let it rest a bit after you ull it from the egg, anyway. It will ontinue to cook as it rest, and should be just right then.

That would be undercooked for 'pulled' pork. That should be cooked to 195º+/-, but you could cook the same piece of meat to 160º or so and slice with no problems. Or you could cure it and then smoke it to 138º and call it Buckboard bacon. :laugh: .......None of which are undercooked.

Go to the market place and look for an app called "Meat Temperature Guide". It is a free download. Just installed it myself so not sure how good it is. Jer
