ABTs cheese choice.

Just to follow up on an earlier weekend post, as some people have asked.
Considering I did not fancy cream cheese (even though there was fresh cream cheese in shop), I chose : -
1) soft goats cheese. (I added chives).
2) Strong gorgonzola
3 Creamy gorgonzola (like gorgonzola and mascarpone).
The third option worked real well. We have the creamy effect with a bit of kick. It is damn expensive though.
Still got half of the kid to finish. I am going to roast the bones now and make a stock.

I have a friend who doesn't like cream cheese so when I make ABT's for him I used leftover grits. Usually cheese grits....just another option...

Try pieces of harder cheese, like Asiago or Parmesan. They soften nicely, but don't ooze out as easily.

Port wine cheddar cheese spread. I don't use cream cheese either.
