Honey Cured Ham for smoking

I found Egret's recipe for Maple Bourbon Ham on the forum -- looks fantastic. The only ham I could get my hands on is honey-cured. Any thoughts on that combination of a honey cured ham, smoked in the egg with a maple bourbon paste? I was thinking of just going easy on the maple so it isn't too sweet. Any other ideas? The ham is spiral cut. Of course we'll be having guests for this Easter cook. Thanks in advance for any tips.

Inwould defer to egret, but I honestly think you could apply it tomany ham (spiral, country, city, honey) and it will be excellent. Ham is such a strong base that it is frankly hard to screw uped egli avea del cul fatto trombetta -Dante
