    Hey Molly - that should work wonders for a very deep dish pizza though I have always done mine in cast iron fry pans.

    We used aluminum pans similar to yours in the old style pizzerias where I worked that got me through college.

    If you can find how they make the cornmeal crust in Chicago (Gino's East) please pass it on to me...
    That is real good pizza....
    I am a thin/thin crust guy, but that is good.
