Appreciate the good info. This egg is at our cabin in Minnesota, gets used on weekends only. I do cover it. Opening the lower vent after the coals cool is a good idea. It has something to do with the sun because I have a second egg that sits in the shade when not used and I have never had the mold problem.

You assessment is correct. My large sits in the weather and had the problem. The small is on the covered porch and has never had that problem.Large, small and mini now Egging in Rowlett Tx

I'll be damned. I had that happen in my mini twice last summer, but never in the large. That's the difference right there. Large is always in the shade. Huh.

Mine is in the sun most of the day....But I haven't had that problem.
