another wonderful chicken with "Cluck & Squeal"

No pictures to share but last night I egged some Cornish Game Hens using Marc's new rub called Cluck & Squeal. I had splatcocked the birds and brined them for 20 hours in a simple bath of kosher salt. Then rinsed, dried and left in the refrig for 6 hours so the skin could dry well to promote a nice browning. I then smeared with some ICBINB and hit with a even dusting of the rub. 300° direct for about 70 minutes with pecan chips. Extremely tasty comfort Sunday meal of chicken, mashed potatoes and corn.

  • I am glad you enjoyed it Ron. I have gotten some great reviews over the last couple of days. From Red Tag Foodnetwork Chef's and a World BBQ Champion loves my approach to BBQ. Huge compliments of a recipe that was for my wifes 31st birthday. It makes me real happy to hear that it is becoming a favourite in households slowly all over North America. I am still trying to find the time to complete my website or just get it running well enough to take orders. I am glad I joined this family of Eggheads, I have made alot of friends from all over on this forum. If and when you have a chance, try that Turkey recipe out and let me know what you think.

    That Cluck and Squeal is one heck of a rub! I'll be using a lot of it in OKC. ;)
