Island Beach Chicken

This is one I made up yesterday and the chicken was REALLY good, kind of like a sweet jerk sauce.
I ran out of lump and had to use my old Brinkmann charcoal grill. It made me appreciate the fire control of the Egg!

Island Beach Chicken
1 whole chicken, cut into pieces (or 8 bone in thighs, 4 leg quarters, whatever....)
1 ea roasted red bell pepper
1 ea habanero pepper, seeded and diced
1/4 cup green bell pepper, diced
1 ea green onion, diced
1/4 cup red onion, diced
1/4 cup yellow onion, diced
1/4 cup parsley, diced
2 cloves garlic, diced
1 tsp salt
1 tsp dried thyme
1/4 cup orange juice
1/4 cup lime juice
1/4 cup oil
Put everything but the chicken into a blender/processor and make into a paste.

Marinate the chicken for 4-6 hours.

Grill over 350f direct heat. I had to turn it frequently to avoid the sugars from burning. In the Egg that normally take 8-12 minutes a side but it ended up taking about 30 minutes on this grill.

This chicken was one of my favorite ones I have done, the flavor is outstanding. Now I want to try this marinade on some shrimp.

Why not use whatever charcoal you used in the brinkman, in the Egg? -

That's why I kept this grill (with it's one missing wheel), it's fun to have a challenge sometimes!

It was a mix of Kingsford blue bag and Kingsford comp. That doesn't do well in the Egg, way too much ash for my liking.
