didnt see the thread but sausage supply places have it sometimes, dont know what they do to make it high temp. the preshredded stuff doesnt melt as well, theres a coating on it to keep it from turning green quickly, i think its just corn starch. here is where ive seen high temp sausage cheese stuff before

Richard,
You could try Saginaki or Raclette

google 'Halloumi' cheese.. i think raclette should be served with little taters and cornichons as intended .. to strong to mix with other stuff [ i have some in the fridge and it just might be dinner] i will check wegmans on sunday they sometimes carry halloumi. i can pack some in my suitcase along with the scrapple and bring it to sunshine ????
providing TSA does not confiscate it as it looks like plastique on the exray scans  -
Thanks for the offer was thinking of making some venison sausage in the future, just gather info. See you soon.
-
Halloumi has a very long shelf life .. months if i remember .. it is a grilling cheese, if i can find somem i will bring it .. worst that can happen is you layer it with loney and grill it

wanna trade for some pearls?

Queso Fresco doesn't like to melt and is easy to find and relatively inexpensive. It has a slightly salty flavor, I think it would be great in sausage. -RP

Good idea, have some cojito left over from the sonora dogs. Should work?
-

Richard: As bill has said, Haloumi. And to both you and bill, I can get it at Restaurant Depot. Won't be an issue throwing some in our cooler, and will save bill from being pulled aside for a 'haloumi explosives' search! Besides, I need more of your whole pepper!
Seriously, let me know. Glad to bring some Haloumi, and was actually debating grilling some up at the after party. It reminds me of Feta, except it is super firm. Even after grilling, it doesn't get 'gooey'. Some seriously tasty stuff!!
I also agree with Randy with the Queso Fresco. Used it in the Pupusas the other night, and even though it was just a thin layer of corn between, it never oozed out. Tough stuff! But doesn't add much flavor IMO. -

Hmmmm..... I wonder who could have posted about that? Heheheeee.

Thanks for the cheese offer, but will pass as my fridge is overflowing and am not sure when my venison connection is going to let me have some for the sausage. He does not like the thought of home made anything except alcohol related. You remember Jesse!

I knew it was you but if I just pingged you no one else would have offered the other great ideas. Thanks
