Risotto and Polenta

With the couple of risotto posts, I had a craving, which I looked after with some jerk chicken :)

On sunday we tried polenta after a friend brought some into work. Wicked stuff off the grill :evil:
He was nice enough to give me his families recipe and bring in the wheatlets that go with it

After about 45min it starts to cream up..yummy

After this it was poured in a sheet pan and left to chill.
After it cooled it was sliced and finished on the Egg.
Plated with some prime rib and more risotto :woohoo:

The polenta is a bit of work, but so worth it.

    That looks outstanding. I have never heard of wheatlets. Do they add a lot to the polenta?

    I am new to polenta.
    My friend says it makes the polenta creamier and it is how his Nona made it :laugh:
    He brought the bag in for me cause they are harder to find :)

    Thanks. I googled wheatlets and semolina or cream of wheat is a reported substitute.

    What was the ratio of wheatlets to cornmeal that you used?

    Shane, I love my polenta like that as well. Not a fan of the soft version.

    The ratio is 1:1
    For this recipe I used 1/2 cup of wheatlets and 1/2cup of cornmeal :)
    Not sure why, but the recipe says not to use cream of wheat.
