Just Another Beautiful Day in Sunny Florida

It was beautiful here yesterday, so I went boating. About 80 degrees and clear blue skies with no clouds. I heard the dolphins go by, yes, I heard the blow holes and it was a family of 5 dolphins.

This guy flew by checking me out and landed closeby - he was hoping I was fishing and would throw him a bite!

On to dinner at my brothers house. I stopped at the lobster store and bought 2 dozen FL oysters to take over - shucked them on the dock. They were good size.

The egg getting ready - the marguritas were already flowing:

I had some helpers this time. We used garlic butter, parmesan cheese and Old Bay on top.

The egg loaded up:



Here is my niece getting ready to try her very first oyster, she is very brave!

Guess what? She loved them and ate 5 of them! Barbie liked them too.

I made some crabcakes.....

I have no idea what happened to the cooked crabcake pics!
Here are the bums, slacking as usual, while I run back and forth from the kitchen to the egg!!

I am on a spinach kick, so I made a salad with warm bacon dressing, and did the dressing in CI skillet on the egg.
Cook 5 strips bacon, remove and crumble. To the fat in pan, saute chopped red onion. Add in 1/2 cup red wine vinegar, mustard, honey, S & P. Allow to cook a minute, then pour over the spinach in bowl and toss to coat.

My brother cooked a pork loin, check out how juicy!! He pulled it at 138 degrees internal.

I was stuffed but the die hards had dessert. Warmed up chocolate pop-tart with maple syrup. I know, the die hards are weird.

Just not a lot of good oysters in central Texas.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -

Great as usual Faith, you are so right about the day, we went kayaking for the first time this year, manatees have mostly moved out since the Gulf is up to 70, but anothr cold snap will bring them back

Elizabeth, I go out in the bay and cut the engine and just drift out there. Yesterday it was so quiet I could hear people talking on land. Then I heard the blow from the dolphins from behind me, near where the pelican was. They are relaxed all right - while I was running around in circles. At least they helped with the oysters, and my brother was in charge of cooking the pork.
Oh, forgot to mention, my niece got a kick out of chucking the empty oyster shells into the bay.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
