Cooking DIRECT over the coals

What is your favourite ish to cook over the coals? It can be high heat or a low and slow temp...just wondering.

Steak followed up by burgers.

Burgers or steak or chops.EVERYTHING else goes indirect.Other than veggies and stuff that don't matter. :laugh:

Beef if I can afford it. Pork is good. :P I love chicken I can't get enough of it. I have had lamb and it's good.
Making bacon is fun.
Bread making is rewarding and pizza it fantastic...you get the picture? :woohoo: :laugh:

Fruit. I always finish my egging with fruit, either direct or indirect. Turn down the heat after pulling the steaks or chops. Love bananas with a palm sugar / coconut milk caramel. Usually just cut peaches, plums or apples, etc in half, core or seed, sprinkle with DP Pineapple head or turbo sugar and spices. Start flesh side down to get the marks, then flip and cook until soft.

I cook basically everything direct -- mostly on a raised grate. The only things that are indirect are ribs, pulled pork, and pizza.
