Stuffed Lobster on an XL BGE, mmm, mmm, good!

The wife surprised me with some live lobsters she picked up on the waterfront market in DC. I've been wanted to try my hand at shellfish on the egg for sometime so I decided to try Alton Brown's roasted stuffed lobster. I added my own twists to it and of course roasted it on the egg instead in the oven for some more flavor. On to the cook!!
Here are the lobsters waiting to meet their maker. Poor little guys.

I steamed them for 2 minutes in order to kill the lobsters, then iced them down to stop the cooking. They may looked cooked, but they are very much raw inside.

After about 10 minutes in the ice bath it was time to get them ready for the egg.

Pull the legs and rolled out the meat in them for the stuffing.

Into a pan with a tbs of butter for a couple of minutes.

Added a diced shallot and 3 cloves of garlic, also added another tbs of butter. I have 10 crackers waiting to be crushed into the mix to soak up the butter and complete the stuffing.

Lobsters de-clawed, split in half legth wise. I removed the innards and liver, then spoon the butter, shallot, garlic, lobster leg meat, cracker stuffing into them.

Onto the egg at 450 degrees. I put the claws on about 3 minutes earlier then the stuffed lobster. Once the stuffed lobster hits the grill it should take about 10 min per pound to cook.

Pulled off and ready to eat.

Onto the table with the rest of the feast.

Stuffed lobster, boiled potatoes (seasoned with old bay, olive oil and grated pecorino romano cheese) and of course some clam chowder.

Wow was it good, stuffing and lobster meat came out perfectly. Clam chowder bought at the waterfront in DC was awesome, not to mention the potatoes. One for the books.

Thanks for the compliments guys. The really good points about using this technique is you don't stink up the whole house boiling lobsters. Likewise, I like the lobsters texture better when its grilled. The stuffing absorbs a lot of lobster juice which makes for a great side as well.

WOW that looks good. Good for you....Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
