Take 2" filets rub heavy with black pepper and green egg seasing on both sides. Let stand until room tepature. Heat egg to 650 and add two cups of soaked hickory chips. Cook 3 min., flip and cook 3 min., flip and shut dampers cook for five more min. Cover filets on hard plate with foil and let stand until ready to eat. (When flipping steaks move them to differnt areas on rack) Quik and simple with no mess!
