As a newbie, I just wondered when you cook for your family do you cook just for one meal or do you want to cook more so you can freeze some for later. Two or more chickens instead of one or two or more butts? I'm cooking chicken for the first time on my large tomorrow and my wife and I had this discussion as we went to the store.

    Bigjohn, I almost always cook extra to give to my parents, since my mom can no longer cook. And yes, I do vacuum seal and freeze stuff often.

    We always try to cook enough for 2 meals. We eat one the night of the cooking and then the leftovers a day or 2 later. We rarely freeze anything except for Brisket since it is such a big piece of meat.

    I would say as you go along you will find butt cooks are great fresh but sometimes It's great to pull a small pack of shredded pork out of the freezer. :P ;)

    It's important to have a good vacuum sealer. Yes it is great to have leftovers and some stuff in the freezer. You will find stews, chilis, braises and pasta sauces take on a new element when cooked over fire. They are great for quick meals afterwards.

    The bigger pieces of meat always have left overs for the two of us. If I do chicken or chicken parts or some such and don't pig out too much, we'll have left overs to freeze or at least have the next night. Tomorrow's cook will be pinto beans with a ham bone so there will certainly be left overs for a 2nd night and some to freeze.

    First of all, welcome to the madhouse!

    I often cook enough for a couple of meals, but I rarely freeze cooked food. The other day, I did Egret's chili. Been eating chili all week, but didn't freeze it. It's gone now, by the way.

    I will often cook enough for a couple of meals (chops, chicken breasts, sometimes burgers), but I only freeze stuff if there's just no way I will eat it all before it rots (a pork butt or a brisket, for example). Some folks don't want to eat the same meal for several days in a row. But I'm okay with that. :) To a point anyway.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I can't believe how many of us went on a Egret chili bender recently. :P I made 2 batches and froze 3 packs enough for 9-12 servings. I ate that stuff for 4 days too.

    Thanks to all of you for replying to my first post on this forum. I teach Photoshop Elements to seniors at the county college and I constantly tell them thst it is not that hard but they just have to learn the language and the techniques. Now I am telling myself that same thing about cooking on the Egg.

    It's Faith's fault. Her post the other day is what sent me over the edge. I had never tried it before. Not even sure I've ever done ANY chili - at all!! Had it, of course, just don't think I've ever cooked it myself. Mighty tasty!!!

  • I have been accused of "cooking for fifty" for a good many a year now... :unsure:
    After taking on a catering job a while back, where I actually cooking for fifty for a week, my wife now realizes that I really most often only cook for "maybe 30"... :whistle:
    I tend to cook big, eat big and love left-overs

  • There are only 2 of us for now and I cook for as little leftovers possible. I am one of those that hate eating the same thing over and over! We usually take leftovers to work to eat. As far as buying raws, we use AB's method of freezing hamburger and chicken breast and food saver things like pork chops etc.
