ok 9 poundish rib roast on- i got egg

to 325 in snow in Alabama. It took a minute to put plate setter in and grate (dropped to 225) but slowly back to 300
Trying to stop at 325 for the long cook
Probe in and set to 115

In my sub freezing temps, about 10', I found the frozen plate setter blocked the heat from getting to my roast chicken a few weeks ago. So I learned to light the frozen lump, close the top and let the frozen egg heat up while I pre-heated the plate setter in the oven. I'm going to give this method a try in a day or two with a rib roast.
