Was wondering if anyone had a good brine for duck? Time in brine? Thanks

I do mine in Italian dressing, over night. Simple and works great !!

I agree with the Italian Dressing and when I am in an oriental mood some soy sauce is added. I usually take a jaccard and make lots of little holes for the seasoning to get in and then during the cook for the fat to get out.

there is so much fat in duck im not sure brining would do much for it, it doesnt seem to dry out like turkey or chicken unless you way way overcook itfukahwee maineyou can lead a fish to water but you can not make him drink it
