Is it better to smoke your steaks or cook them directly over the fire?

Both.
Smoke-roast them at 300 until they are nearly up to your desired temp, then give them a good sear at high temp.
Or vice-versa. Sear then roast.
Works best for thick steaks. -
I usually cook mine at 450-500 degrees for a couple of minutes per side...til 125 internal temp...take off the BGE, cover with HDAF and let sit for 5-10 minutes, then serve
I put a little EVOO, sea salt & garlic powder on my steaks before cooking.... -
I always sear mine as hot as I can get the egg for 3 minutes per side and shut it down for 5.

My wife likes hers 650 deg. seared on both sides and that's all. I prefer mine to go the extra couple of minutes with all vents closed.

Sear,rest,season,roast.

Why do you put EVOO on your steak before cooking?

It is a light coating of EVOO and helps spice adhere to steak...

So does water, and water doesn't burn like EVOO will.
If it doesn't affect the taste at all, then why waste the good stuff? -
Everything burns at 650-700. I dont see why everyone gets upset at olive oil on steaks. I do it all the time and its fine. Tastes the same as when I use canola or peanut oil. A teaspoon of olive oil seems pretty affordable.
