Yesterday Bobby-Q started a thread about the 45 day dry aged prime rib he served in class the night before. Well that tripped my trigger and I said to myself, "Self you ought to do that too...since you can!"
So I dug out this 1 pound 10.5 oz prime rib from a sub-primal I had aged for 45 days and then froze. The anticipation for Saturday nights feast is already growing! BTW - no you're not invited! :laugh:

While I love the holidays I promised myself that I wouldn't get another sub-primal aging until after year end since we always need all the room we have in the refrigerator a week before Thanksgiving through New Years day. But after that you can count on another Drybag doing its thing around another chunk-o-cow!Re-gasketing the USA one yard at a time -
