Mad Max Turkey - internal temps?

question about the mad max turkey, and specifically the ice - I see that his method is to get the breasts to 160 and the thighs to 180 - makes sense to put ice on teh breasts because then they need longer to reach the lower temperature
but I also saw that the FDA has in the recent years changed its recommendations saying that 165 internal temp is ok for the entire bird
so do y'all still ice down the turkey breasts before cooking?

I did and it came out great.
Large, medium, small and a mini. Egg'n, golfing, beer drinking, camping and following football and baseball.

sure they are safe to eat but for me the texture is better at 180° plus,,, I cook chicken wings and legs to 200°

Beernuts: Poolman is absolutely correct. And yes, 165* is safe for all parts of the bird, even if the bird may still appear "undercooked" particularly in the dark meat. However, you will find you enjoy dark meat much more at temps of 180* and above for tenderness and texture reasons. As long as you don't have the thighs inside a deep roasting pan, the poultry will take care of the temp differences in the different meats all by itself.
Iced a bird once. Didn't make enough difference for me to bother to try again. As long as it's cooked right, I think the ice thing is, well, a waste of ice. JMO. -
