My family loves eggs benedict pizza...Also has been a big hit at past eggtoberfests

pizza dough
evoo
hollandaise
lightly scrambled eggs
canadian bacon
mozzerella cheese
tarragon
red pepper flakes
Rub evoo on dough and put the rest together...easy 'nuf!
I usually bake at 450f for about 20 min

We have made this one a few times at Eggtoberfest and it is simple and good.

Potato Breakfast Casserole (Eggfest 2000)
Description: Egg, potato, cottage cheese casserole. A Christmas tradition for our family. I pop it in the oven (or on the Egg) when everyone begins to gather around the tree. It's ready to enjoy after the gift opening.
Ingredients:
• 6 slices bacon, fried & crumbled • 1 green onion, chopped
• 1 6 oz pkg hash brown potato mix with onions • 1 tsp salt
• 1 qt hot water • 1/8 tsp pepper
• 5 eggs • 4 Dash hot sauce
• ½ Cup cottage cheese • 4 Dash paprika
• 1 Cup shredded Swiss cheese
Instructions: Cook bacon; drain, crumble and set aside. Cover potatoes with the quart of hot water and set aside for 10 minutes. Drain water from potatoes. Beat eggs; add potatoes and remaining ingredients, except bacon and paprika. Pour mixture into buttered, 10-inch pie pan. Sprinkle with bacon and paprika. Cover and refrigerate overnight.
Remove casserole from refrigerator. Place cold, uncovered pie pan in COLD oven or Big Green Egg on pizza stone. Bake at 350 for 40 minutes or until eggs are set.
Yield: 6 servings -

These aren't very challenging, but they are easy to make.
Scrambled eggs in a paella pan - ingredients to taste.
Eggs in a phyllo pastry... ingredients to taste.
As a pizza dude... maybe a breakfast pizza or quesadilla would be fun.

Just this morning I was tossing whether to have French Toast or Peaches 'n Cream Oatmeal. So I added a bag of Peaches 'n Cream Oatmeal to the French Toast batter. Soaked the bread. Then griddled it. Easy, fast and excellent.

Just like what you cook on the stove.
Good old omelet, pineapplem and some avacado
Buckboard Bacon (this is loin)
Buckboard Bacon/Canadian Bacon (Boston Butt)
Strip bacon and eggs are great.
Sorry no picture of this one... Cowboy Breakfast is one of my favorites is take a Dutch Oven, some small pieces of bacon on the bottom, then a good amount of diced or thinly sliced onion, about 1 to 2 inches of hash browns (or better cut your own out of fresh spuds), a few eggs broken on top of the spuds. Season with your favorite seasoning and finally about 1/2 inch of shredded cheese. I will sometimes mix in some pepper jack with cheese mix.
There are no measurements as this is a real "trail meal", that is just use what you have on hand.
Put the open DO on the egg about 325° and cook. I love this with cherry wood or apple wood.

Michael, that top picture looks fantastic and would also work well in a DO or large cast iron skillet.
I think I will go fire up the egg and have a late RGBHV breakfast.

Here's one we really like. Have even done it at a couple Eggfests and it went over really well.
SAUSAGE-CRANBERRY STRATA
Ingredients:
1 1/2 lbs bulk pork sausage (we used Jimmy Dean spicy)
10 English muffins, diced (about 12 cups)
4 medium green onions, sliced (1/4 cup)
1 cup sweetened dried cranberries
8 eggs
1 1/2 cups milk
1 cup sour cream
1/2 tsp salt
1/4 tsp black pepper
3 cups shredded Monterey Jack cheese (12 oz.)
Procedure
Preparation:
1 Spray 13x9-inch (3 quart) glass baking dish with cooking spray. Cook sausage in skillet over medium heat till done, stirring occasionally; drain.
2 Spread half of the diced muffins in the pan. Top with half of the sausage, half of the onions, and half of the cranberries. Repeat layers with remaining muffins, sausage, onions and cranberries.
3 In a large bowl, beat eggs, milk, sour cream, salt and pepper with a wire whisk until well blended; pour over mixture in pan. Sprinkle cheese over top.
4 Spray sheet of foil with cooking spray; place sprayed side down over pan. Refrigerate at least 4 hours, but not longer than 24 hours.
5 Heat EGG to 325 degrees with plate setter (legs up) and grill on top. Place covered casserole directly on the grill and bake for 30 minutes.
6 Uncover; bake additional 30-40 minutes or until top is golden brown and knife inserted in center comes out clean. Cut into squares. -

I agree on both accounts - dutch oven and CI skillet.
At the time of the pic, I had just bought the paella pan and wanted to try some things out. I'm really happy with it so I bought a few more.
One thing I do like is that it allows me to make enormous portions in one dish. With 4 children and a fair number of guests, it always comes in handy.
