I made the gheee per your instructions. It's as clear as glass. Thank you. I didn't seem to need the second heating because it was already crystal clear.
Also, is it supposed to be as dark as the picture? One other thing: the yield seems less than the 1/4 pound loss that you indicated. The picture is from 2 lbs of butter.

Nice job. It will darken a little, but if you burnt some solids it will be darker and may taste bitter.

Ghee is clarified butter but it has a unique flavour. sort of nutty. You don't boil, just heat until the fat floats and the milk solids go to the bottom. IMHO you are way better and way cheaper to buy it at an Indian market.

Thanks, Steve. We have a pretty big population of Indians here. There's even a section of town they call the Mahatma Ghandi district. I'm sure I can find a market there.
