Ok, my friends love the brisket and the pork shoulders I do on my egg. Now they want me to do deer.
They recently gave me about a 3 -5 lb ham off a young doe. It looks really lean, very little fat
How do I cook this? Open to any ideas, even if not using egg.
Do I brine it/ Sear it then slow cook it. wrapped bacon/

I like to cover the venison with bacon to keep it moist.
