Flavor Injector

I picked up a flavor injector (big hypodermic needle) at Williams Sonoma on a whim. They are rumored to provide the equivalent of marinating, basting etc. by various sources. Has anyone used one of these? Does anyone have any good injection mixture recipes, tips, etc?

Is it one with holes on the side or like a regular needle?

Did it come with more than one tip? Be real careful if it has multiple holes as you draw it out. You can really make a mess of the kitchen ceiling :laugh:

It has one sharp metal needle about 3 1/2" long, with a 3 tablespoon capacity. If your doctor pulled this thing out, it would scare you to death!

For poultry, I still prefer brining to injections, but don't always have the time to brine. For birds, I like equal parts of butter/honey/white wine. Simmer about 1/3rd cup each with a sprig of rosemary. Cool slightly and inject.
For pork butts, I like Chris Lilly's pork shoulder injection but I don't find that it is necessary.
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons WorcestershireKnoxville, TN

Sure I use injectable marinades, injectable brines and flavor liquids (like a jazzed up beef or chicken broth) all the time. I even
my Thanksgiving prime rib roast with an au jus about 40 minutes before serving.

If the holes are not in the side of the injection needle you will get worms. :ohmy: Plugs of meat clogging the needle.
