It certainly wouldn't hurt, but see what the sazon does first. Achiote (annato) is more of a color maker than a big flavor maker, so I would just add a bit at a time to achieve the color you want. See what the sazon does first, though. Lamb shanks on tonights menu??

tonight if they get done!
had to add more lump! started with fresh full to fire ring, sauteed w/ old Le Cruset on CI grid on spider (BGE stablizied at 350 -- when took off because oil smokin' and didn't want to burn veggies, temp was near 500! guess all that opening the lid bad! for stablility
almost to simmer point now
