Sriracha pork & pineapple casserole

Ginny marinated a pork tenderloin in sriracha, sesame oil, olive oil, lime juice & sugar for a few hours. I cooked it on the mini raised direct at 375. We also had Faith's pineapple casserole as a side dish. It was deeelicious. Here are a few pics:

Ginny, ROCKS. I understant the pork, but the Pineapple Casserole is another Ginny Rules dish. I'am sure it was Delish.

Here is my version of Faith's Pineapple Casserole:
PINEAPPLE CASSEROLE
20 oz can crushed pineapple or pineapple chunks (reserve 4 tbs of juice)
3 tbs flour
3 tbs brown sugar
½ stick butter melted (may need a little more)
1 -1 ¼ cup shredded cheddar cheese
1 cup crushed Ritz crackers (25-30 crackers)
Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter.
In a large bowl, stir together the sugar and flour. Gradually stir in the shredded cheese. Add the pineapple (less 4 tbs of juice), and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.
In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown. -
