Turkey Tinga

For tailgating yesterday I chose to make quesadillas from leftover turkey and a classic Mexican tomato stew known as "Tinga". This would best be called Tinga de Gaujolote.

I saw the Tinga recipe at this website and knew it would be good for tailgating after Thanksgiving:

Here is the Tinga, absorbing the shredded Mad Max left-over turkey…

(It was very cold outside - 29* - so this part was done inside and not on the Egg. The quesadillas (or maybe 'Tinga-dillas') were made on my griddle. Shredded cheese topped with Tinga, folded, browned, then cut).

Then stacked into foil pans, on ice in the cooler for the 3-hour trip later in the day.

Reheated at the game in a chafing dish. Served with sour cream and homemade guacamole for topping:

Our tailgate friends and fellow Greece travelers made Mousaka (in blue-covered pan) and baklava (on stand to the left of the banana pudding) to celebrate our Greece trip:

Our team was unable to generate a "W", but it was not unexpected, considering how poorly they're played all year. :ohmy: :angry: But the tailgating has been the best. :woohoo: Looking forward to next season and more good tailgate Egging! (Maybe a few wins too)! :)
