Chicken Standing Up

Since I own one of those little stands for chicken I decided to try it out and compare the results to a spatchcocked chicken. Nothing on it but a bit of clarified butter I had lying around and some salt and pepper.

I was happy with the results - but getting it off the grill is a little more challenging. You also have the advantage of the the drippings to make gravy.

Four batches of cookies today - four more to go - then that's the end of it.

Interesting batches this round Kerry. I love steel cut oats...you can chew forever...funny! Irish coffe is interesting.
I like the birds both ways. To me pretty much the same except for time of cook. If I'm in a hurry spatch it is.
    Nice post.

I'd love to be getting rid of some of these cookies right about now. I'm not working again until Wednesday - and I'll have 8 batches of cookies to take along. And I left 3 good containers at work on the weekend - so I'm going to have to find something else to transport them in.

I vote for #4 without tasting.Try one of dem ckickens upside down. ;) Leggs and thigs higher in the dome(hotter there),breast closer to the grid(cooler there).A friend of mine posted about doing them that way and had good results.(Little Steven) :)

I'm thinking of trying the steel cut oat cookie with a nice old fashioned oat next. Not quite so much chewing per cookie!

I wondered about that when I was putting it on the stand - I loved the crispy wing ends and would like to get more crispy skin.

Can't share the recipe because it isn't mine - but it uses oil as the fat, fair bit of spice and unsoaked steel cut oats.
