Turkey Tinga

For tailgating yesterday I chose to make quesadillas from leftover turkey and a classic Mexican tomato stew known as "Tinga". This would best be called Tinga de Gaujolote.
I saw the Tinga recipe at this website and knew it would be good for tailgating after Thanksgiving:

Here is the Tinga, absorbing the shredded Mad Max left-over turkey…

(It was very cold outside - 29* - so this part was done inside and not on the Egg. The quesadillas (or maybe 'Tinga-dillas') were made on my griddle. Shredded cheese topped with Tinga, folded, browned, then cut).

Yum !

Then stacked into foil pans, on ice in the cooler for the 3-hour trip later in the day.

Reheated at the game in a chafing dish. Served with sour cream and homemade guacamole for topping:


Our tailgate friends and fellow Greece travelers made Mousaka (in blue-covered pan) and baklava (on stand to the left of the banana pudding) to celebrate our Greece trip:

Our team was unable to generate a "W", but it was not unexpected, considering how poorly they're played all year. :ohmy:
But the tailgating has been the best. :woohoo: Looking forward to next season and more good tailgate Egging! (Maybe a few wins too)!

Thanks, Rebecca. One of the guys really decorated it up for the last game of the year! It was our first year to tailgate and we had a blast, despite the disappointing performance from the team.

The Tinga is not to difficult, but shredding the meat is a pain! Lots of possibilities with the sauce, though. I put 2-3 chipotles from the Adobo can into the Tinga and it turned out a little spicy, but not to much for anyone who ate them. -
Nice, clark. That looks like alot of fun. I like Pati's website too.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

When I researched the Spanish translation of turkey, Pavo was the first choice (and my Mexican friend (from Veracruz) used Pavo), but the definition said that Pavo was more technically referring to Peacock and Guajolote was for turkey.
Confused.....
Either way, I was easy to make and very good to eat.
This recipe used Roma tomatoes, tomatillos, onions, spices plus sauce from 'Chipotles in Adobo') (plus a couple of the chipotles :evil: ). -

She really finished strong,though it took 30 minutes longer than her usual marathon time. I'm really proud of her (and my 3 other friends who ran). It has been called the most difficult of the major marathons in the world. Miles 9-20 is uphill !
