Hi all-

I'm a new egghead. Attempted Mad Max's Turkey today. The result was not as tasty as I hoped. The skin was fantastic, but the breast meat was a bit lacking in the flavor I was hoping for. I know there are a bunch of variables that went into this, but does anyone want to help me take a stab about how to improve this for the next time? I never flavored under the skin but I did salt and fill the cavity with herbs and pepper and salt.

    Try injecting a butter based sauce or brining with fresh herbs.

    gotta flavor under the skin, but even then, that doesn't 'penetrate' the meat. the only thing (unless you brine) that the inner breast meat can taste like is turkey

    unless you brine, nothing is going to actually go INTO the meat. the inner cavity is lined with a membrane (same membrane you peel off pork ribs), and that sucker is pretty much impermeable (for our purposes).

  • I will definitely try this next go round. Do you brine on other poultry too? I had "okay" results on the last chicken I made(before the turkey)
