(Help) Maintaining Temperature!

I am in the process of using my egg for the 2nd time and I am having a really difficult time maintaining temperature. Currently, I'm trying to keep at 350 and working on my Turkey (Mad Max)
Any tips on this would be awesome! Thanksgiving is counting on you!

Don't rush the temp. Did you stabilize your temp before you put the bird in? Are you low or high? How is the wind in your area, I have chased the temp all over the place on a windy day?
When you put your turkey on the temp will drop keep your settings it will come back to 350. If you over shot your temp shut down the airflow a little more and let the temp come down. I had the same problem the first time I cooked a whole turkey and found that patience is the victor.DavidBBQ since 2010 - Oh my, what I was missing. -
I'm high and low. Right now high. I am trying to be patient before putting on the bird. Wind is low where we are at.

Will shutting both hampers kill the fire all together? That certainly lowers things a bit.

It takes time to bring it down, be patient.
If you are not real high and are ready to cook you should be able to put your bird in, which will drop the temp considerably. Then close your vents to where you think they should be and watch carefully. It will take awhile. Resist the temptation to open the dome, that screws up your temps more than anything.

The trick is to make small adjustments. If you are currently running high then just close down the top and bottom vents just a little. Note that it takes a while before the temperature will drop. The mistake I made early on was that I would close it a little...no change...close it more...no change...close it more...10 minutes later the temp was 100 degrees cooler

Don't worry about it too much. If it is 25 deg one way or the other no biggie.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Quick answer is yes, if left closed for too long. When I am high(temps), I have had success in using a spray bottle with water. Just spray a little on the coals(like one or two pumps) the steam created will put some of the coals out but not all. Good luck.

I've stabilized a bit. It took about an hour to get here and we'll see how it holds. Just dropped the turkey.
