Ok, question.
When simmering the neck, giblets etc. you say all day. HOw long minimum. Is 5 hours enough?

mine are going on first thing in the AM (6 or so) for a 4 pm dinner

More than enough time...just want to make sure everything is tender. And this simmering of parts is has been happening for hundreds of years. Happy Thanksgiving to you, and all you hold dear.

I usually do tem at least 6 hours, but as was stated earlier - so they are tender and able to cut up easily -
yes, 5 hours is sufficient. . ..just simmer it almost to a boil .. . .
