About how long should I plan on for a mad max method on a 10-11 lb turkey? Just a ball park figure so I'll know when to get started.
Also, do I need to sit my bird up on a vrack, etc. in side the roasting pan or can it just sit on the bottom of the pan?
Thanks, this is my first mad max bird.

In the upper left there is a search forum feature. I searched for you and it says 12-15 mins per pound at 325 degrees.
Follow the instructions you have for the MM bird as it tells you how to set up for your cook. -
Two hours max at 375 dome.
