Mushy butt?

I cooked my first butt yesterday. Lost my fire and had to restart at 6 am. Total time on the Egg for a 7 lb butt was 16 hours to get the temp to 200* internal with a calibrated probe. Wrapped in foil and towels and in the cooler for about an hour and a half ( I was working on my Egg table and kinda lost track of time :P )
It came out very tender but seemed to be a little "mushy" or over cooked. Also, the flavor was not up to what I have cooked BE ( before Egg). I used one of those little packets of oak pellets that came with the egg when I bought it. Any thoughts on the mushy or the flavor? Should I pull it at 190* next time?

    From the pictures it looks great! If it was a little too mushy for your taste you might consider pulling at 190-195 range next time. Did you use a rub?. I like a rub with some sugar content. It kind of carmalizes on the outside to give you a little more texture.

    As far as the flavor- you probably just need to use more wood. I'm not familiar with the pellets, but I imagined they were burned up within the first hour. Consider hickory chunks or just a whole lotta chips mixed in throughout the lump; or some combination. Last time I used hickory chunks and cherry chips and I was happy with the flavor.


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg. 

  • Glad you mentioned the calibrated thermometer, that eliminates a bit.

    As far as taste, I think you might need more smoke. I've never tried those pellets but your bark seems awfully light in color. Mine is almost black. I like to use 2-4 fist sized chunks of wood mixed in with my coal. Fruit woods like cherry or peach tend to aid in color. I usually use a mix of hickory and cherry, just my preference.

    Texture - I usually target just under 200. If you like it firmer, try pulling earlier it 195 or so.
