Tonight's dinner - ribeye!

My husband is hunting this weekend and I'm getting started on Thanksgiving. Today I prepared a squash casserole, and at least snapped the green beans for the GBC....I picked up the turkey breast and while I was there got myself a rib eye and some tomatoes. Reserved a small amount of squash casserole for my dinner (couldn't very well go to all that trouble and not have some today).

    Here you go...be warned - I adjust measurements to suit my own taste. This is the basic recipe that was shared with me by a friend a few years back - over time I probably add more of everything (we like leftovers).

    Yellow squash – diced. How many? 6 -8 (as many as you think you need for the size casserole you are making – now isn’t that precise)!
    ½ to 1 large grated onion (really, use as much as you prefer – if you like onions, use a whole one, if not, only ½ - and use a sweet onion).
    3/4 stick unsalted butter
    8 oz grated cheddar cheese (or more if you prefer)
    2 well beaten eggs
    2 Tbsp mayonnaise
    1 cylinder of Ritz type crackers

    **I do not dice the squash, nor do I grate the onion. I run them through the food processor. I like for them to be chopped finely – it saves time mashing them after they are sautéed, and definitely make the draining process faster.

    Beat the eggs and mayonnaise together and set aside.

    Melt the butter in a sauté pan, add the squash and onion. Sautee until they are tender. Add salt and pepper to taste.

    Drain as much liquid from the squash/onion sauté as possible (I use a large strainer).

    While the squash/onion mixture is still hot, add the cheese and stir together. Then add the ¾ of the cracker crumbs and egg/mayonnaise mixture and stir together.

    The casserole should be moist – but NOT soupy.

    Pour the mixture into a greased baking dish/pan. Top with the remaining cracker crumbs and dot with butter chips.

    Bake in a 350 degree oven for approximately 30 – 45 minutes, or until the top is golden brown.

    The girl who gave me the recipe said she has even used Cheez-its! I really do play around with it - tasting the squash/cheese/cracker mixture to be sure it's to my liking before I add the egg/mayo. I hope you enjoy it!

    Man the squash casserole was a curve ball. Onions and squash I was thinking for sure some fried squash goodness. Than and okra are comfort food to me. Mighty fine looking meal there.

    It was delicious - cored and a dab of unsalted butter stuffed inside...simple, and with the seasoning on the steak really didn't need anything else! Thanks for looking.

    It's funny - as a child I would not eat squash. A few years ago one of the ladies I work with "guilted" me into tasting her squash casserole - ever since then this has been one of my favorite sides. I prefer it to baked potato and would have it more often if my husband would eat it. :ohmy:

    Unfortunately the tomatoes were not from my garden - got them at Fresh Market - paid too much for them, but they were so good. (To make matters worse, found the exact same package of tomatoes at Target for $3 less than I paid at Fresh Market). Oh well, they were worth it... ;)
