About a month ago we picked all kinds of green cherry tomatoes right before a killing frost. We placed them in a sealed brown paper sack 'cauz I had heard they would ripen that way and turn red. Well today I opened the sack to find only 5 of them have ripened. How long does this take?

I did that one year and mine ripened in a couple weeks. I never did it again because they may have turned red but the flavor was like a grocery store tomato. Since then I pickle my leftover green guys. -RP

Thanks, Randy. Last year was my first attempt and I had taken the sack to our basement. I found it 6 months later this spring. Ooooo what a mess!

ive always put tomatoes in the window, not fully green ones though. get some mrs wages pickling spice, cut them in half and pickle them, im thinking ther dill one with a little extra sugar and a jalapeno or two added. its a refrigerator pickle mrs wages is good stuff, ive done jalapenos and fiddleheads with it. really easy to do if you can get the jars, pickled tomatoes are greatfukahwee maineyou can lead a fish to water but you can not make him drink it

you don't have to boil them and seal them and all that jazz?Re-gasketing the USA one yard at a time

You boil the pickling mix then pour it over the cut up tomatoes in the jar. Like Mike said they are refrigerator pickles meaning you have to keep them refrigerated. -RP

i would boil the liquid and drop the tomatoes in give it a few minutes then jar cap cool . mostly you dont need to can it if you put in the fridge for a month or two or even a bit more, i had jalapenos all summer that i put in a jar and dumped the hot liquid in and put in the fridge. its called refrigerator pickling, wages has the mix, old dave used to post about it and thirdeye has some stuff on it. wages has a spice for dillied green beens, might start with that. easiest pickling you will ever find and really good

i can eat a jar full of pickled green beans, asparagus is right there as well. add some heat to the green beans, its easy to change it up, use small jars and pack tightly. you can make each jar different and mark themfukahwee maineyou can lead a fish to water but you can not make him drink it

heres a recipe for green cherry tomatoes, i would dillie them with the wages but these are probably close. you will like them or not, the hunter fisher crowd here makes pickled green toms all the time, its a crunchy type pickle. do a search on piccalilli, thats a hot dog favorite in newengland, green cherry tomatoes would work for that if you found a recipe but it would take more work
