Satay Chicken. Very good! Next time will include some pineapple and bell pepper. This is a keeper!

Looks good! Whatever marinade you are using, try going 48 hours. The chicken will give up any resistance. Squash the pieces with your palm before putting on the skewers.
If you get them to 1/4" to 3/8" thickness they will hold the marinade better.

Kebabs are middle Eastern, Indian and Pakistani. Satays or sates are east asian, mainly Indonesia, Malaysia and the Thai Penninsula, including the surrounding islands. From what I know the Oriental sates are mainly flattened. Generally when I do chicken sates I remove the filet from the breast and slice the breast about the same thickness. The boneless thighs I slice in half.
The longer and flatter the meat the more of the marinade it takes. Wow that was long winded. :ermm:
