Pork tenderloin using Egret's ham recipe?

Since Egret's Maple/bourbon ham recipe is soooo good, I was wondering if anyone had tried using that recipe on pork tenderloins?
We are hosting a party on Dec 4th and I was looking for a different recipe for pork tenderloins. Considering stuffed, but since I recently served the Egret ham, it's been on my mind. Anyone see any reason it wouldn't work on tenderloins, even though they are not precooked like the ham?
Inject with maple syrup ( maybe some FAB-P mixed in), then rubbed with the paste and marinaded overnight. Heavy smoke at 250* and pulled to rest at about 137* or so...Sounds delish!

Clark, I injected a pork tenderloin with Fab P and it was magnificent. I haven't tried Egrets' recipe with it, but it sounds great. I love his hams. I'm gonna try one, the tenderloin, that is, with Fab P and baste it with teriyaki sauce this weekend. Have you tried Fab B on beef yet? I cooked a brisket with it and, boy howdy! Wow! Good stuff!

I bought some FAB-P and B a month or so ago, but have not cooked a butt or brisket yet. I got them to try for competition, but while typing the above post, the thought of mixing some P with the maple syrup sounded good, especially since the tenderloin is raw whereas the ham is already flavored as a pre-cooked ham.

Can't see why it wouldn't be good. Maybe a tad sweet for tenderloin but still good. Sorry but I have to ask what Fab P is?

FAB-P (pork), -B (beef) and -C (ckn) are flavor enhancers developed and sold by The Ingredient Store. Many comp teams inject their meats with these or similar products.

Also, I WAS concerned about the small diameter of the tenderloins and the maple syrup, but was going to reduce the quantity injected to try to compensate. Probably should make a trial run before feeding 20-30 people.... :ohmy: -

sounds like the same stuff one find in 'enhanced' pork, plus MSG?
the ingredients list MSG by itself, plus also "Hydrolyzed soy protein" which is, well, msg in a form that allows you to get away without having to all it msg. :laugh:
though i don't believe msg has ever clinically been found to cause the "problems" (seemingly always undefined) attributed to it, but still, doesn't anyone ever just wanna taste the pork itself?

I was doing a couple of butts the other week and had some Fab P left over, so I injected the pork tenderloin . I wrapped it in cling wrap and put it in the fridge over night then egged normally. The difference was amazing. It was extremely moist and tender, with a rich pork flavor. Fab products are worth every penny! And Stike, if you haven't tried it you are really missing out. It's like the difference between a Chevy and a Lexus.

About how much volume did you inject into the tenderloins? -

You're correct about the ingredients, and I have always tried to be somewhat of a 'purist', but when I found out a lot of teams were injecting flavor enhancers ( read MSG), I decided to buy some different brands and try them out.
The concern/hesitation I had with feeding a crowd is the fact that lots of people have issues with MSG - usually headaches. -
I used about 4 oz. give or take. It will puff up pretty good!

at the risk of opening cans of worms by the hundreds... i think that an objective look at the msg issue shows that there isn't any clinical evidence to support the claims that it is harmful in general, or even to specific people. inject away!

I never tried this on pork tenderloins, but, don't see why it wouldn't work! Evans (Chubby) tried this on a fresh ham and said it was great.......I'd go for it if I were you.........

I know some folks that are allergic to msg. Just be aware of that when serving to guests.Molly

i don't think there's any clinical connection, just anecdotal. if they were truly "allergic" to msg, they'd be allergic to a lot of other foods
i'm sure they feel something, just saying that there have been more studies than quaker has oats, and no clinical study has found a real connection.. :unsure:ed egli avea del cul fatto trombetta -Dante -
