did some bacon wrapped duck breasts last night with some shrimp stuffed potatoes. good stuff.
seasoned the duck with salt, dizzy pig dizzy dust and simply marvelous season all.

Great looking quackers,is the duck wild or store bought?
I would like to try smoe duck like that but I will have to get store bought Quakers.

the bacon happened to crisp at 160 internal on the ducks. i got lucky i think.
this was my first time cooking duck on the egg and it took quite a bit longer than i thought it would. -

these came to me clean, but i'm very interested in duck fat. i'll be on the lookout for your post! -
going to semi freeze it, maybe with some food processed onions and sage and put it under the skin on the turkey breasts, some thing new to try if the plan comes together

Our season opens Saturday but I have to work this week end so it will be Monday before I can go. Hope the opening weekend zoo doesnt run them all of! :laugh: Will probably be doing me a batch hopefully next week. Looks great BTW!
