It's no Mad Max, but still good: Thanksgiving pics

Like I said before, next year I will probably Mad Max the hell out of a turkey. But this year it was quick and simple, as I wasn't even planning on doing the turkey until the night before Thanksgiving. I made an herb paste, which I tucked between the skin and the meat all around the turkey. I also spatchcocked the bird, which made this baby cook fast - only 2 hrs at 325 dome indirect to reach 165 in the breast.[p][p]The results were great - even though I did not brine, the breast meat was still moist, juicy, and I loved the effect of the herb paste.
