Found some very nice, thick cut, Chuck Eye Steaks yesterday. What a great cut for a small price. Did two for me last night (just had the 2nd one with eggs for breakfast), along with some Ragin' River Maple/Butter Salmon for Mrs. Ranger.
It's one of the few times I've seen them cut this thick. Bought all they had...6 steaks total, and spent about $13. I need to watch for these more often.

Looks mighty good LR. That's another cut we will never see around here. If it wasn't certified to come over on the Mayflower we don't get it here. :(

The chuck runs into the rib and the chuck eye steak cut from the rib end of the chuck can be very similar to a ribeye. Probably best to ask the butcher because the closer you get to the head, the more connective tissue and the chuck steak turns into a tougher piece of meat.

I just had to run to the store for something and thought I'd check out the meat aisle again. There on the shelf were the typical 1/2" - 3/4" cuts of Chuck Eye Steak. One of the butchers was stocking, so I told him about yesterday's purchase, and asked him if they would custom cut the Chuck Eye to any thickness. He looked at me kind of sheepish, told me yes, and then told me that the "Poor Man's Ribeye" was the butcher's best kept secret. That's all I need to hear.

We've had the Chuck steaks before and they were delicious and tender. Great price too. I think we got ours at Kroger.

Ask for Check Eye Steak. The butcher will know.

I once asked a butcher why I didn't often see certain cuts of meats....What I got from the conversation was that you don't see them because the butchers keep them for themselves.

I worked for an old NHL player who was so frugal(cheap)
He had a "poor man's" version of lots of expensive foods. Everything except beef, he ran 300 head of cattle. :laugh: -
