6.8 pound 3 bone, cut/tied.
4 hours at 250 dome to 125 internal, 10 minute rest period, fire sear for 6 minutes. Perfect!!!

I decided to try a little smoke, chunk of cherry and apple wood

Bringing the egg up to temp

Loading the egg with the rib and away we go

After 4 hours

Putting the final touches on with a good sear

After the sear

Time for culinary delight
