<p />now i covered all my senarios: i started today on an Atkins diet & needed to make some chicken breast for lunch on Monday- a tossed salad with sliced chicken breast and Jalopena cheese slices.
I used Evangeline's Gilla rub (thanks to chef Will) on both chicken breasts. One chicken breast marinated a few minutes in Worchestershire sauce + Grilla rub, the other rubbed in yellopw mustard + Grilla rub. smoked @ 300F indirect with hickory wood chips for 45min. came out perfect.
the mini really rocks - you may ask- indirect on a mini ??
yes, i used my home made ceramic platesetter, but this can be done by buying a second grid & laying a mini pizza stone (6") between the 2 grids. pizza stones can be bought in a ceramic store like "Daven's" in Atlanta
